GEP 325 - Global Food Systems: Scarcity and Sustainability Unit(s): 4 We examine the structure of the U.S. food system and the global food system more broadly. We investigate the entire food supply chain, from the farmer to the consumer, with attention to social justice issues and environmental sustainability. We explore approaches to addressing hunger and other inequities, including technological advancements, land reform, fair trade and agroecology.
